Apple Cake

Preparation time:  about 20 minutes



Cake Mixture:

3 cups flour

3/4 cup vegetable oil

4 eggs

1/4 cup orange juice

3 teaspoons baking powder

2 cups sugar

2 1/2 teaspoons vanilla


Utensils needed:

Measuring cups and spoons

2 mixing bowls

Electric mixer (or can be mixed by hand)

10-inch greased tube pan


Have all ingredients at room temperature.


Pare, core and slice 5 medium-sized apples (1/4 inch slices). Mix together 4 tablespoons sugar and 1 teaspoon cinnamon. Sprinkle over apples and mix together lightly. Set aside.

Put all ingredients into mixing bowl and beat together until smooth and thick. Pour 1/3 of the batter into the bottom of greased tube pan. Put a layer of apples and then another layer of batter and more apples, ending with apples on the top layer. (Arrange apples on top layer nicely.)


Bake at 350 degrees for one hour or until done. (Test with cake tester; may take longer.)

Cool completely and remove from pan after running knife around edge of pan to loosen cake.

This dessert needs no frosting and makes a nice presentation. It tastes even better the second day.
