Zucchini Bars


3/4 C. Butter, softened

1/2 C. Brown Sugar

1 tsp. Vanilla

1/2 tsp. Salt

3/4 C. Coconut

3/4 C. Seedless Raisins

1/2 C. Sugar

2 Eggs

1 3/4 C. Flour

1 1/2 tsp. Baking Powder

3/4 C. Chopped Dates

2 C. Shredded Zucchini

 

Cream butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, salt, and baking powder; add to creamed mixture. Stir in coconut, dates, raisins, and zucchini. Spread into a greased 9 x 13 inch pan.

 

Bake at 350° for 40 to 45 minutes. 

Frost while still warm with Browned Butter Frosting.

 

Browned Sugar Frosting


1/4 C. Butter or Margarine

2 C. Confectionary Sugar

1 tsp. Vanilla

3 Tbsp. Milk

Heat butter over low heat until slightly browned.  Remove and mix in sugar. Stir in milk and vanilla until smooth.
