MAPLE SYRUP (April 2010)

After an unusual winter, we have a good supply of maple syrup.  This year's supply has an outstanding flavor

with a slight tinge of vanilla!

MAPLE SYRUP

 

We offer 3 grades of Maple Syrup made from our own trees.  No additives

and our trees are not on any "hormones".  Mother Nature's purest!

 

Grade A Light Amber — Also known as "Fancy" Very light color, mild

delicate maple flavor.  Early season when weather is colder.

 

Grade A Medium  — Slightly darker and slightly more intense maple flavor.

Most common as the days become warmer.

 

Grade A Dark Amber — Strongest maple flavor as the season winds down

and the days become warmer.

 

Maple syrup is made from mid-February to late March, and we boil on a

daily basis.

 

Maple Ham Burger

1 lb. lean ground pork

3/4 lb. deli-sliced honey-baked ham,

   coarsely chopped

2 tablespoons pure maple syrup

1 tablespoon grill seasoning

2 teaspoons hot pepper sauce

1/2 teaspoon dry mustard

2 tablespoons extra-virgin olive oil

Four 1/2-inch-thick slices fresh pineapple

4 Kaiser rolls, split and toasted

1 cup pineapple or mango chutney

8 red-leaf lettuce leaves

1 red onion, thinly sliced

 

In a large bowl, combine the pork, ham, maple syrup, grill seasoning, hot sauce and mustard. Form into four patties. Set aside.

In a large nonstick skillet, heat one table-spoon oil over medium-high. Add the pineapple slices and cook, turning once, until golden, about five minutes. Transfer the pineapple to a plate and set aside. In the same skillet, heat the remaining oil over medium-high. Add the burgers and cook, turning once, until cooked through, eight to 10 minutes. Place one burger on each roll bottom. Top with chutney, lettuce, a pineapple slice, onion, and a roll top.
